Pumpkin Chocolate Chip Cookies

Ingredients
Wisconsin Cheddar Pumpkins
- 11 Cups of Pumpkin (We recommend using Wisconsin Cheddar)
- 1/2 Cup Honey
If substuting for sugar, double the amount used as honey is sweeter then sugar. So use 1 Cup of sugar!
- 1/4 Cup Applesauce
- 1 Egg
- 1/4 Cup Oil
- 1 Teaspoon Baking Soda
- 2 Teaspoons Baking Powder
- 1 Teaspoon Milk
- 2 Cups Flour
If using fresh flour, be sure to use a fork to "fluff" the flour before scooping.
- 2 Teaspoons Cinnamon
- 2 Teaspoons Pumpkin Pie Spice
- 1/2 Teaspoon Salt
- 2 Teaspoons Vanilla
- 3/4 Cup Chocolate Chips
For added flavor, we recomend a dash to a heaping 1/8 Teaspoon of nutmeg, clove, annd ginger.
Instructions
1. Preheat oven to 350°F.
2. Combine pumpkin, honey, oil, applesauce, and egg. Make sure to leave out the vanilla, it will be added later!
3. In a separate bowl, stir together flour, baking powder, spices, and salt.
4. Dissolve baking soda in milk, then mix it into the wet ingredients.
5. Sift dry ingredients; if using all-purpose flour, skip the sifting and gently stir it in.
6. Add vanilla and gently fold in the chocolate chips.
7. Cook for 10-12 minutes and enjoy!
